Right so this is the kind of thing I absolutely love reading about on here because dogs are genuinely one of the best indicators we have for this stuff. They pick up on infrasound, vibration, things we can't detect - your dog wasn't being daft.
The roof thing could be a dozen mundane things obviously, foxes are a nightmare for this and people always underestimate how heavy they sound when they're up there. But the combination of the sound AND the dog staring upward at the same time is what makes it interesting.
Where abouts are you located roughly? Asking because if you're near any known ley line convergences or older land there's sometimes a pattern to these kinds of reports clustering in certain areas. I've been documenting that sort of thing across Cheshire for a while.
Did the dog make any noise or just stare? That distinction matters more than people realise. Silent staring tends to be the more unsettling behaviour from what I've seen reported.
