Had something similar in our old place in Shrewsbury a few years back. Came down at about 2am for a glass of water and three of the upper cabinets were wide open. No draught, windows all shut, checked everything. The latch mechanisms were all functioning fine the next morning, I tested them multiple times.
What I'd say before jumping to anything paranormal is rule out the basics first - temperature fluctuation can cause wood to expand and older magnetic catches to release, and if your house is on a slight lean (loads of old properties in Shropshire are) gravity does the rest. Worth getting a spirit level on the cabinet frames honestly.
That said, if you've ruled all that out and its happening repeatedly at similar times of night, that pattern is worth documenting. Log the dates, times, temperature in the room, whether anyone else is home. Patterns are everything with this kind of thing. What type of property are you in and how old is it?
