Had something similar at my old place in Harrogate back in the 90s. Came down in the morning and three cabinet doors were open, nothing disturbed inside, just open. Happened maybe four or five times over a couple of months then stopped completely.
The skeptic explanation is always temperature changes causing the hinges to expand but honestly at 2am in November I dont think the kitchen was warming up that much.
Did you ever try setting up a camera overnight? I never did back then, wish I had. These days I always say document everything first before jumping to conclusions either way. What's the layout of your house like, is it an older property? In my experience older buildings do tend to have more of this sort of thing going on but I wouldn't rule anything out.
