Few things worth ruling out first - is your house older, are the cabinets mounted on a shared wall with a boiler or anything that vibrates at night? I always say eliminate the mundane before you go further down the rabbit hole.
That said, kitchen activity specifically is documented quite a lot in the literature. There's something about spaces associated with routine and domestic energy that seems to attract this kind of manifestation. Not sure why kitchens get it more than say, hallways, but they do.
Are the same cabinets opening each time or different ones? If its the same one repeatedly thats actually more interesting to me, suggests something localised rather than general atmospheric disturbance. Try placing a small piece of sellotape across the door before bed, just to confirm it genuinely opened and wasnt already slightly ajar when you noticed it.
What does the rest of the household make of it?
