Classic 3am shenanigans, never disappoints does it.
Had something similar in my last place in Ipswich, kept blaming the cat until I realised we hadn't had a cat for two years. Set up a couple of audio recorders and a motion cam near the kitchen and caught some decent EVP alongside the cabinet activity, turned out to be pretty compelling stuff when I reviewed the footage.
Worth doing a temperature baseline in there too because rapid cold spots can sometimes cause wood to contract and produce banging sounds - easy to rule out before you go full poltergeist on it. That said, 3am specifically is worth noting, thats the window I see the most reports on this forum and in my own fieldwork.
Anyone else had this in a property where previous tenants had a rough time? Would be interesting to cross-reference the locations and see if theres a pattern emerging.
